Our pulled pork is seasoned perfectly with our Classic Mild Barbecue seasoning (so the kids can eat it) and then we top it with a little extra of our Classic Spicy Barbecue seasoning when we serve it to give it the heat that we love. I like making this recipe on Mondays and having enough meat for the rest of the week. I usually will steam several different fresh veggies right before I make pulled pork and we're all set! On nights when we have dance or an unplanned family adventure I know that I just have to warm it all up real quick and we have easy and healthy meals for the week. You can toss it on a bun, a baked potato, or on top of mashed potatoes (my favorite). But we usually just put it on our plate next to a ton of steamed or fresh veggies to keep it low-carb and quick. And it's so good that I promise you won't need any barbecue sauce! If you forget to pull out your pulled pork and thaw it out completely and it's still a bit frozen (like I do all the time) then you just add 5 to 10 minutes to the pressure cook time. If it's all the way frozen, then I would add at least 15 minutes. When it comes to shredding the pork:
Pro Tip: We buy our pork butt in bulk at Costco. As soon as we get home, we divide it into approximately 4 lb. cuts. Each of the 4 lb. cuts we then divide into 4 pieces. We usually end up with 3 freezer bags of pre-cut, 4 lb. pork butts so that when we pull them out an thaw them they are ready to be shaken in seasoning and cooked; no chopping involved.
